This recipe is famous in North Indian Cuisine blended with potatoes and fresh Peas cooked in Dhaba style along with additional ingredients added to enhance the flavor and taste. This recipe is side dish for rotis, naans and Puloas.

Ingredients
  • Onions grated - 1
  • Tomatoes chopped-3
  • Ginger garlic paste- 2tsp
  • Kashmiri Red chilli powder- 2tsp
  • Cumin seeds -1tsp
  • Potatoes - 3
  • Fresh Peas - 1/2 cup
  • Turmeric powder- 1tsp
  • Red Chili powder- 2tsp
  • Coriander powder- 1tsp
  • Kasturi methi leaves - 1/2 tsp
  • Fennel powder- 1/2 tsp
  • Mustard seeds- 1tsp
  • Astafoetida- pinch
  • Canola oil/ vegetable oil
  • Salt
  • Coriander Leaves chopped- garnish
Directions
  • Step 1 Take a pan add oil 2thsp allow it to become hot in medium flame then add grated onion fry for 3 minutes then add ginger garlic paste mix well keep stirring at regular intervals until the raw smell leaves then add red chill powder along with chopped tomatoes keep the flame low cook until the tomatoes turn mushy mix well cook for 5 minutes .
  • Step 2 Keep aside.
  • Step 3 Take a pan add oil 2tsp allow it to become hot then add mustard seeds allow to splatter then add Astafoetida, cumin seeds fry for few seconds then add potatoes cubes, fresh peas add 1/4 cup of water and little salt close the lid cook in medium flame for 5 minutes until the potatoes are cooked
  • Step 4 Remove the lid add the Onion mixture along with dry masalas turmeric powder, red chili powder, coriander powder, kasturi methi,fennel powder mix well add little salt and 1/4 cup water cook for 5 minutes until the aloomatar curry leaves oil.
  • Step 5 Finally garnish with chopped coriander leaves.
  • Step 6 Note:first step of Onion mixture is very important process to this recipe as it gives color and texture to the dish also frozen peas can also be used for this recipe.
