This recipe is an awesome combo with fresh green beans blended with potato cooked in South Indian style . It’s served with Dhal Varieties, Sambhar or Rasam Varieties

Ingredients
  • Fresh Green Beans chopped- 1 cup
  • Boiled Potato- 1
  • Onions chopped- 1
  • Curry Leaves few
  • Turmeric powder- 1 tsp
  • Asafoetida- pinch
  • Dry red chilies- 2
  • Mustard seeds- 1 tsp
  • Urad Dhal - 1 tsp
  • Red Chilli powder- 1 tsp
  • Water - 1/4 cup
  • Salt - 1 tsp ( add according)
  • Coconut scrapped - 2thsp ( optional)
Directions
  • Step 1 Take a pan add oil 2 thsp allow to become hot add mustard seeds 1 tsp let it crackle then add Asafoetida and Urad Dhal fry in medium flame until Dhal turns light brown in color.
  • Step 2 Next add chopped onions and curry leaves fry for 3 minutes until onions turn translucent.
  • Step 3 Next add dry red chilies and turmeric powder fry for a minute.
  • Step 4 At this point add fresh Green Beans chopped 1 cup mix well fry for 2 minutes then add water 1/4 cup mix well add salt 1 tsp cook for 5 minutes in medium flame until the water is absorbed Beans is cooked 80 percent then add boiled potato mashed to the curry allow to cook for 2 minutes.
  • Step 5 Finally add scrapped coconut 2 thsp ( optional) to the curry cook for a minute or so.
  • Step 6 Green Beans Potato is ready for serving.
  • Step 7 Note : Don’t over cook the beans to mushy.
